Date and Almond Cake Ingredients
There are seven ingredients for this easy to make cake and you likely have all of them in your pantry except perhaps the dates.
NOTE: For this date and almond cake, you can really use any oil you like such as olive oil, avocado oil, or coconut oil but stay away from seed oils. I have used both avocado oil and olive oil for this recipe.

Substitutions and Add-Ins
I personally love this cake just the way it is, but you could make a few changes if you like. There are almonds sprinkled on top before baking but if you have a nut allergy you can leave them out altogether or substitute for another nut.
- Substitute almonds for walnuts – I prefer the buttery, slight sweet taste of almonds over walnuts
- Stir in dark chocolate chips – 1/2 cup of dark chocolate would provide extra sweetness and a depth of flavor
- Add in orange zest – orange would give this cake a little zing
- Make it Vegan – Use an egg substitute for a vegan option. With nuts, dates and rolled oats, this cake makes it an easy vegan option

How to Serve and How to Store
You can enjoy this cake warm with a cup of coffee or at room temperature with a drizzle of honey. I enjoy eating a slice of date cake with fresh raspberries on the side and a glass of cold milk.
- Store the cake in an air tight container and enjoy within a couple of days
- Keep in the fridge for up to three to four days
- For longer storage, slice and freeze the cake. Place parchment paper between the slices and store in a freezer safe container. Defrost at room temperature to thaw.

Date and Almond Cake
If you are looking for something nutty, sweet, gluten free and easy to make…you need to give this cake a try. This cake is not overly “American” sweet but more European sweet as I prefer. If you are looking for something super sweet and sugary you might be disappointed. But if you want something sweet and healthy, I would give this cake a try! This date cake has a lighter, healthier taste and feel.

Easy Date and Almond Cake
Ingredients
- 1 cup water
- 2 cups pitted dates
- 3 eggs
- 3 tablespoons oil of choice (except seed oil)
- 1 teaspoon baking soda
- 1/2 teaspoon vanilla extract (optional)
- 11/2 cups rolled oats
- 1/2 cup chopped almonds for the top
- pinch of salt (optional)
Instructions
- Pre-heat oven to 350 degrees and line a round cake pan with parchment paper.
- Add pitted dates, water, eggs, baking powder, vanilla and salt to a blender and blend until smooth
- Add rolled oats and pulse a few times, stopping to scrape down the oats and pulse again. Only pulse a few times to combine. Careful not to over blend.
- Pour the mixture into a lined round cake pan and top with 1/2 cup of the chopped almonds or nut of choice.
- Bake for 45minutes or until golden and set in the middle. (using an 8" round cake pan)
- Allow to cool before slicing and serving. Serve warm or at room temperature.
Notes
Careful not to over blend the oats. Blend and scrape down the oats and pulse again.
I used an 8" round cake pan for this cake. If you use a different size plan adjsut the baking time as needed.
Careful not to overbake so the cake stays moist.
